Bacon & feta sandwich

Bread (brown,with seeds, cereals, anything you like but as healthy as posible)
Bacon (preberably smoked, as thinly as possible)
Cheese (feta in this case)
Tomato
Onion
Salt
Pepper
Parsley

The wrong omelette

Ok, ok, it was supposed to be an omelette but it didn't go according to plan. Still, one of the best non-omelettes I had in my entire life.

Pitty that it was too dark to take a decent picture, even with flash... Mmmm, I'll have to cook it again some other time.

Ingredients:
- green asparagus & pumkin flowers (both fresh from the Finca Tres Peñas stall in the Tahiche market)
- onion 
- garlic
- eggs
- oil (in this case I used my own juniper infused olive oil)
- salt & pepper

Instructions:
wash and chop all the veggies
pan fry them in oil
add the garlic crushed or finely chopped
beat the egg
add the fried veggies to the egg and mix well
put it back in the pan, adding a bit of oil if required
if it doesn't stick, try it in omelette form
if it doest, just keep mixing until it takes a "scrambled" texture & it doesn't burn

You can eat it on its own or on toast or with rice.

1,001 veggies soup

green asparagus
dark green courgette
carrots
green pepper
leek
red cabbage
beetroot
tomatoes
onions
spinach
... and / or any other veggies that you find laying around, for that matter!!!! 
I know, it's not literally 1,001 :-)


wash, peel & chop
boil in salted water
blitz

serve with a dash of cream (optional)

              *      *       *
           
It didn't look to good while cooking...



 

but it tasted fastanstic and I had some left-overs to freeze - very convinient for again!

15-Jan-2012 menu & sort-of-chicken stock recipe

Breakfast: cereals

Lunch: Fish (pollack in this case) pan fried with herbs & soya sauce; carrot & courgette soup

Dinner: Roasted poussin (small chicken would do too) stuffed with lemon & roasted onions and red peppers

Washed down with a glass of white wine

Sort-of-chicken stock recipe:
With the carcass & roasted skin of the poussin, I made "poussin stock" (ie. chicken stock) by boiling the remains. Now I have my very own stock! See stock recipes for, emmmmm, stock recipes)

Chickpeas with chorizo

Onion
Chorizo
Chickpeas
Potatoes

Peel & chop the onion finely
Fry until golden
Add chopped chorizo

Peel & boil the potatoes
Add the cooked peas
Drain and add to the pan with the fried onion & the chorizo
Stir

Serve & eat... enjoy!

Chicken with cashew nuts and carrot purée

Chicken
Cashew nuts
Carrots... so far so good
Onions
Courgette
Potato
Olive oil
Salt
Herbs
Butter


Peal & chop all the veggies
Boil them all, except for the onions
Fry the onions in a pan with olive oil -I used my own chilli infused one
Add the diced chicken and the cashew nuts until golden
Mash the veggies when done & season to taste with your favourite herbs
Add some butter for flavour too :-)

Serve and enjoy!

Panga and pasta

Panga
Onion
Courgettes
Sweet paprika
Soya sauce
Rosemary
Salt & pepper
Parmesan cheese
Pasta - shape of your choice

Cut the panga into small cubes
Salt & pepper it
Add sweet paprika & rosemary to taste
If possible, let it all marinate for a while with a bit of soya sauce

Fry in a pan chopped courgettes & onion, when golden add fish

Boil the pasta in salted water

Strain & add the fried ingredients

Add parmesan cheese to your liking

Gnocchi with steak strips

Gnocchi
Steak strips
Pepper & salt
Cheese (in this case gouda)
Butter
Onion

Chope the onion finely & fry in the pan
Cut the steak into think strips, salt & pepper them & add to the onion
Cook the gnocchi in boiling salted water
Strain & put some butter & cheese
Add the onions & steak
Enjoy!

Chicken satay skewers

peanut butter (chunky or smooth, your choice)
coconut milk or coconut water and milk
onion
green pepper
brown sugar
soya sauce
salt & pepper
oil
chicken breast
wooden skewers

Satay sauce
chop onion finely and fried until golden in a pan

stir in the peanut butter, coconut milk, soya sauce & brown sugar
mix until it has a uniform texture & season to taste
let it cool down

Chicken skewers
cut the chicken into cubes, bite size
salt & pepper them

marinate the chicken cubes overnight in the satay sauce

put the chicken cubes in the skewers, alternating a piece of meat & a piece of vegetable (onion and / or green pepper) or any other vegetable that you like

barbecue or fry them and... enjoy!

Chicken wraps

Fried onions & chicken seasoned with pepper & pimentón dulce
(any spices at hand will do, really, as long as they are... spicy!)

Cheese (maasdam in this case, any cheese will do too)

Tortilla wraps (1 mayonnaise, 1 fried tomato sauce)
